Bubby's restaurant made its name on delicious, homemade pies, filled with fresh-picked produce from local New York farms. Over the past 25 years, it became a full-fledged Tribeca institution, offering a traditional American-style breakfast, lunch and dinner to its dedicated clientele (a group that has included the likes of John F. Kennedy Jr., Robert De Niro, and Jude Law).
Though the menu has evolved over the years, it's the simpler food that continues to draw the locals on a regular basis, with brunch service as the star attraction. Think pancakes topped with house-made, seasonal fruit compote and maple syrup; fried chicken and fluffy buttermilk biscuits (one of the restaurant's signatures); kale cobb salad; and fresh-baked pie made with foraged sour cherries.
The secret? Each dish is made from scratch with the best local ingredients Bubby's can find. The sourdough for the pancakes comes from a small family business that's been around since 1890. The heirloom grains are ground for the restaurant by Anson Mills. The grass-fed cow milk comes from Battenkill Valley Creamery; the barbecue is pit-smoked from farm-raised, heritage breed hogs and smoked with cherry wood from Bubby's upstate farm; the maple syrup comes from a farm on the edge of the Vermont border; the ice cream is made in-house with Hudson Valley Fresh dairy cooperative cream.
Owner Ron Silver has long been committed to "defending the American table," seeking out sustainably farmed and traditionally processed foods for his classic American fare.
